Well, it’s still winter. And despite some recent blog posts and tweets I’ve seen proclaiming spring is “right around the corner”, don’t be fooled: Winter is not almost over. And I’m not happy about it.

So, I’m “celebrating” in the best way I know how…through food. A cheesy casserole, specifically, made into a complete meal with chicken, roasted red pepper, spinach. The cheese béchamel gets a subtly smoky kick and killer color from roasted red pepper puree, so the vegetable isn’t so much hidden as a defining characteristic of the dish. I started contributing to Hellobee almost halfway through the month so I only had 3 posts, but my experience so far has made me think a lot about blogging, specifically as it relates to Pinterest. My discussion on introducing baby to herbs and spices photo has nearly 2,000 pins, while my other two photos have less than 100 pins combined. Why the disparity?

I thought these pumpkin scrambled eggs were seriously genius, despite being late in season. I love the salty-sweet combination and that it’s a protein and vegetable finger food. Also, I haven’t seen anyone else post this idea before and was excited to share it.

The quinoa and sweet potato casserole has so much going for it: flavorful, inexpensive, filling, healthy, vegetarian, and, well, LARGE. It’s also endlessly adaptable; this version is deeply spiced with cumin and cinnamon.

I have some theories why the puree post was such a hit (and why the others were not), but maybe a more important question is: Should I care? Because I think I do, at least a little bit. On the one hand I am pretty idealistic and tend to make decisions based on trend…on the other hand, Pinterest is like a game. And I like games.

We’ll see how February plays out.
