Popsicle Week is coming to an end, but I’ll be enjoying it throughout the weekend while I catch up with everyone’s contributions. The fact that I haven’t been on top of that is a testament to how hectic this week has been. Normally my fear of missing out would not allow such a delay.

I’m a three square meals a day kind of gal, but pregnancy has compelled me to take up regular snacking (even in the middle of the night…ugghhh that’s the worst). I’ve found it necessary to keep ready-to-eat items on hand, like these strawberry-banana rye muffins. More interesting than your typical muffin, they combine rich, dark rye flour with sweet banana and jammy cooked strawberries. I particularly love them hot out of the oven with a smear of almond butter.

My latest article for Recipe.com is all about homemade strawberry milk, made with real strawberries and little or no added sugar. It’s probably too simple to call a recipe, but I got to play around with the ingredients to create some variations we love as much as the original, including chocolate + strawberry and coconut + strawberry.
If you or your little one are hooked on store bought strawberry milk, this is an excellent way to wean yourself from the artificial sweeteners, but it’s also just a refreshing warm weather beverage for anyone. Zane was especially smitten with the flavored milks and exhibited signs of withdrawal when we ran out – good thing they’re healthy and easy to make. We’ve been drinking these flavored milks straight up but they would also be great over cereal or as the base for a smoothie.
